Survived the Long Weekend

We all survived the long weekend.  Drake actually slept in his own bed last night, hooray!  For the Monday holiday we kicked back and had a nice brunch of eggs, english muffins and hashbrowns.  For lunch I just had some yogurt mixed with fruit.  For dinner I made pizzas mine was whole wheat with mushrooms, mozzarella and turkey pepperoni.  Sunday’s little partial walk/run left my shins killing me, oh the value of wearing the right shoes, they were good shoes but worn out and boy did I feel it.

Tuesday my shins were sore when I started out on my run, but they seemed okay by a mile in.  I did squats and lunges at the end.  The run was in THE SUN, the sun the sun it came out!  unfortunately we are going from mid 60s to low 80s in a day and high 80s/low 90s in another which just makes it feel soooo much hotter.  I wanted warmer not 30 degrees warmer in 3 days!  I’m sore tonight, both my hips and thighs, hoping for a good night’s sleep, tomorrow is scheduled as a rest day.

For breakfast I wasn’t really hungry so I had a nectarine and a spoonful of peanut butter to fuel my run.  For lunch I had an egg, an English muffin and a banana.  For dinner I marinated a pork tenderloin in sake, soy sauce, onions and a little bit of olive oil.  I grilled the pork tenderloin and the mushrooms and made a Spinach and orzo salad with cherry tomatoes and white wine vinegar and feta, very simple and tasty.  The orzo wilted the spinach and the feta added a nice richness.

  • Snack –skinny cow chocolate ice cream

Orzo on the spinach sounds soooo yummy 🙂

I hate huge temperature swings, too…plus I always get a headache!

Glad you had a relaxing weekend – sorry about your shins – I had shin splints when I was in high school track – only an ice bath made them feel better.

Your pork looks delicious! Never thought of using sake in a marinade – nice!

We are so funny! Complaining all spring about the cold weather and then complaining when it gets hot! Glad you had a relaxing weekend, sorry to hear about the shins. I had horrible shin splints in high school (sensing a theme here?) and went through so many tubes of BenGay I should’ve had my parents buy stock. Anyhow, stay cool and enjoy the SUNSHINE!!

I want the sunshine just not the high 80s and 90s, at least not yet, i need a ramp up to it! 😛
But yea i think we abuse our bodies in HS. I used to freeze dixie cups of water and run them up and down my shins, peeling back the paper as it melted, it worked.
