Where did the year go? I have been absent most of the week trying to pretend I am not hurting, but my shins have been killing me, who knew one day could do so much damage, they are finally feeling better a week later. I am taking one more day off, a day where they don’t hurt at all then I will go for a short run tomorrow and see what happens. I have also been enjoying the sunshine, although I might wish it hadn’t hit the 90s the sun was a welcome sight! My garden is thriving but now the cool weather plants are fading, which I am totally fine with, I am ready for my tomatoes and peppers and squash, and all the other heat lovers!!!
In the past year I have lost almost exactly 40 pounds, 1.25 inches from my neck and arm, 6.5 inches from my bust and hips, 5 from my waist and 4.75 from my thigh (I only measure one thigh and arm). Pretty damn good! I have also really adopted changed eating habits. Do I still indulge in high fat, sugary foods, absolutely but not often and they are a treat not the norm. The norm is very healthy, tasty meals and snacks made at home, with fresh organic ingredients whenever possible. I still use butter and cheese but in very small amounts, a little goes a long way. Do I miss the way I used to eat, surprisingly NO, not at all, I love what I am cooking and so does my husband. In the past year I have gone from morbidly obese (BMI of 36) to overweight (BMI of 29.5). I’m pretty damn proud of that too. I picked up running this year, starting with couch to 5k. When I started I was running a minute at a time. Since then I have run 3 5k races and 3 10k races and run 8 miles without stopping, who would have thought I could come so far, so fast. More importantly I realised I really liked running! So it’s been a great year. I have also found a ton of support in the blogging community. New recipes, support when I struggle, new friendships. Blogging has opened me up to a much larger community of support and I know I could never lose weight without support.
Wow so I missed 3 days, crazy! Wednesday was too hot to cook so we got take out we got 2 dishes to share and I had a bit over a quarter of each, ben then took the leftovers to work the next day, so it wasn’t as bad as it could have been
. On Thursday I went up to Trader Joe’s it totally sucks that there are none near here! I stocked up on fresh fruits again. I think that is probably the best part of summer the fruit! In winter I get bored of apples, plums, pears etc, summer brings so many delicious options! I also picked up more of their Baked BBQ chips, so good, really crunchy for baked and nice and low fat without tasting it and not overdone with BBQ flavour. For diner I used up the leftover mashed potatoes and turned them into mashed potato pancakes as well as making a dressing of shallots, white wine vinegar and dijon for green beans, it was delicious. Friday I made baked shrimp with feta and tomatoes and I decided to serve it over spinach as well as linguine, I was craving green veggies
It worked well the heat of the shrimp and tomatoes wilted the spinach nicely.

Learning to be Less´s last [type] ..Took me by SURPRISE-
I had made mashed potatoes earlier in the week so I basically just added an egg and some salt and pepper and pan fried them in cooking spray, totally easy and felt very different than mashed potatoes. Glad the pictures make you hungry
I know it was a long post, and I read it all, but I wanted to let you know how amazed I am of what you’ve done–and you should be very proud. Heep up the incredible life change!
