I managed my 30 minutes on the bike, it was torture but I survived! 😛 okay so I’m being a bit melodramatic. I had a really boring day and have nothing much to say except if you have never had cucumbers cooked you need to try them. If you look at the picture below you will see chunks of cucumber that I steamed/sautéed in water and butter (same thing I do for green beans 1 tsp butter per serving so 2 in most cases and about 1/3 cup of water cook for 3-5 minutes depending how crunchy you like your veggies. Toss them occasionally with the lid on to get the butter everywhere, it’s amazing how far a teaspoon of butter can go with water. Seriously cucumber tastes awesome this way, try it! For breakfast I had cherry vanilla oatmeal and for lunch I had greek yogurt with granola and blueberries, lots of blueberries. For dinner we had leftover Chicken Feta Pasta and the cucumber (try it!) and for a snack I had some skinny cow ice cream, I really hate the list of ingredients but it is tasty.
