Monday, Again, Really?

Monday sneaks up so quickly.  It was especially fast this week since we didn’t have our normal Friday off.  Mondays are chores galore, laundry, dishes etc, BLAH

This morning I did 40 minutes on the bike, the bike is definitely not my favourite 12.5 miles in those 40 minutes then I did a quick full body workout on the bowflex.  It’s funky how poorly the bodybugg picks up the activity on the bike it does great with everything else but not the bike.

Yogurt with Raspberries

For breakfast I had a non fat latte, Non-fat Greek Yogurt with mashed up raspberries and some granola mixed in.  So much cheaper than buying yogurt with fruit already in it, especially when Fage is on sale at 50%+ off 🙂  I bought a ton of it and now I need to use it up before it goes bad.  For lunch I made a delicious Creamy Thai Carrot Soup.  Super easy and the creamy comes from silken tofu, you can’t taste the tofu at all but it adds to the dish in creaminess.  For dinner I made a Chili Rellenos Casserole that was good but not great, but it was spicy spicy which was nice, lots of chipotles in adobo in it, mmmmmm!  I also made a side of roasted cauliflower with cumin, chili powder and lime juice, very tasty and a nice complement to the casserole.

Creamy Thai Carrot Soup

Creamy Thai Carrot Soup

Ingredients

  • 2 cups reduced sodium Chicken or Vegetable Broth
  • 1 pound baby carrots
  • 1/2 cup onion chopped
  • 2 garlic cloves
  • 1 Tbsp ginger root, grated
  • 1 Tbsp Red Thai Curry paste
  • 1/2 tsp salt
  • 6 oz silken tofu
  • 2 Tbsp mint leaves
  • 2 Tbsp cilantro

Instructions

  • In a medium saucepan, bring broth, carrots, onion, garlic and ginger to a boil over medium-high heat. Cover, reduce heat to low and simmer for 15 to 20 minutes, until carrots are tender.
  • Stir in curry paste, salt mint and cilantro; simmer 1 minute to blend flavors. Remove from heat; cool slightly.
  • Add tofu to saucepan and puree in pot using an immersion blender (or puree in batches in a blender careful not to splatter the hot liquid) until smooth.

Yields about 1 cup per serving.

I don’t remember which one of us found each other, but boy I am glad we did! Love that we have the same likes of food with the spice! That carrot soup and casserole are right up my alley!

I actually had a carrot soup to make for one of my lunches, I think I’ll use your recipe instead!

Today I made kind of a Thai soup? I took 2 cups chicken broth and simmerd with sliced jalapeno, red chile paste and a dash of sriracha. I added 3.0 ounces of my sea bass from last night and shredded that in. Then right before serving, I am adding bean spouts, spinach, fresh cilantro and a squeeze of lime – can’t wait!

LOL I don’t remember either but it was fortuitous!

That soup sounds really good, aside from the seabass 😛 not a fish fan. The nice thing about that carrot soup recipe is some protein in it.

How does the bodybugg react differently with the biking? Just curious.

Well there are no steps but it seems to consider my effort far lower than a comparable walk. I can work up a sweat and be huffing and puffing but it still calls it all low intensity so lower burn, anecdotal of course and I’m on a recumbant stationary bike so that could be part of it.

As for Mondays sneaking up, for now I’m ok with it because I’m not back in school. When school starts again…oh man. That’s not going to be fun.

BodyBugg + biking = epic fail! Try wearing the Bugg on your calf when you’re biking. Part of how it measures/calculates calorie burn is by your body’s movement, and your arms don’t really move much when you’re on the bike!

LOL I figured out why it wasn’t working but I never thought to put it on my leg LOL, I will have to try that, because yeah on a recumbant stationary bike my arms do not move AT ALL 😛 Thanks for the tip!
