Today was a cross training day so I did 32 minutes on the bike for 9.5 miles then I did a full body workout on the bowflex, tomorrow is my long run but its a rest week so it’s only 4 miles which will seem like a breeze after 7 last week. It was also grocery shopping day, fridge fully stocked with healthy things, hooray.

Eggwhites Scrambled with Tomatoes and Herbs

For Breakfast I made an eggwhite scramble with herbs, cheese and tomatoes and I had a bagel thin with it.  For lunch I had leftover stuffed peppers and salad and for dinner we finished off the Chicken Divan and for a snack we had cookies 🙂

LOL I LOVE to cook, like seriously one of my favourite things, cough cough I think you can tell 😛 So learning to lighten up all my favourites is fun. My husband said at one point if this is diet food, sign me up!

I agree. Your food always look so delicious! Seriously, maybe you should consider writing a recipe book? “enLightened Favorites” Yum, I’d buy it!

And don’t you just love those bagel thins? What a great option!
