May 2nd Food and Exercise Journal

OMG May 2nd, how did that happen??  Somehow May 1st didn’t bring it home but May 2nd eeek, the year is slipping by!  I headed out early to get in my 40 minute run on Soos Creek Trail and it was windy, I headed into the wind going out and had it at my back coming back, it worked out pretty well.  When I first started my knee felt weird, not sure how else to describe it but I stretched it a bit and started again and it was fine, it didn’t hurt it just didn’t feel right… When I got back I made breakfast then the usual Sunday lazyness happened, we were going to pick up brewing supplies but the place is closed on Sundays so sometime this week maybe.  We did take the dogs for walk before lunch then just settled in for the day, avoiding the cold windy day outside.

For breakfast I did eggs in a hole with turkey sausage, yummy, great comfort food, for lunch I made one of my favourite lunch standbys, Bulgar with Sausage and Kale and for dinner I made a new dish, Baked Shrimp with Garlicky Lemon Sauce inspired by Nicole at PreventionRD having shrimp scampi but not having quite that many calories available to us 😛  I like spicy so I made this a touch spicy with cayenne and chili flakes, it was a nice heat, just an addition of flavour without being over the top spicy.

OMG, those garlic shrimp look amazing!! I plan on making your cheese torellini soup tonight for my lunch tomorrow – can’t wait! 😀
