May 16th Food and Exercise Journal

I began the day with a 50 minute run, I felt slow and heavy and tired, I’ve been tired alot lately, so need to find a way to make the dogs NOT sleep on the bed, yeah right…  I managed to run 4 miles but I didn’t feel as energized at the end like I normally do, oh well, I guess they can’t all be good runs.

Grilled Pork Tenderloin with Mustard Rosemary Apple Marinade with Mashed Potatoes and Grilled Artichoke

For breakfast I made waffles and I had a couple of kiwi with it.  We took the dogs for a walk then had leftover pork burritos which were just as tasty, maybe moreso, as leftovers. For dinner I made Biz’s (from Biggest Diabetic Loser) grilled-pork-tenderloin-with-mustard-rosemary-apple-marinade It was absolutely delicious and tender.  I can’t be sure the tenderness was the marinade as I used some sustainably raised pork tenderloin from Thundering Hooves, if you like in Washington I really encourage you to check out this local naturally raised beef, pork and lamb, grass fed and pasture finished meats.  But even if it wasn’t the marinade that made the pork so tender it gave it wonderful flavour and the sauce was even better.  While I had the grill on I also grilled some artichokes, I love the smoky flavour that the grill added to the artichokes.

Tomorrow is a cross training day so bike and bowflex here I come.

Okay, I am going to have to garner some of your energy – even if it wasn’t a good run, at least you got out there!

That’s my goal this week – no less than 60 minutes of exercise a day and in bed by 10:30.

You’re right, not all runs are going to be great ones…unfortunately! The pork looks great…but I’m not surprised, Biz is a mastermind in the kitchen!
