It’s Monday again, you know Mondays seem to come every seven days, does anyone else find this fact annoying? Can’t Mondays come once a month? Monday for me is chore day, laundry, cleaning, dishes that I never quite got around to over the weekend, etc. BORING! I had a few errands to do as well, blah.
Ben worked a 12 hour day so after taking him to work I hopped on the stationary bike and pedaled 13 miles in 40 minutes then did a full body workout on the bowflex, my knee was a bit sore when it rubbed on my pants and I have a gorgeous purple bruise, but I’ll live. The ankle doesn’t hurt at all, I have twisted it so many times it no longer even swells, which is good for my running later this week. I probably should have taken the dogs for a walk but it was raining so well yea it didn’t happen… Nice thing about the rain is all the new stuff I planted this weekend didn’t have to be watered but weather reports are saying no more rain for the week, we’ll see…
It is Meatless Monday today so for breakfast I had an eggwhite scramble with a bit of salsa on top, a bagel thin and nonfat latte, not sure why this seems to have become a Monday habit (the latte) but it’s a great way to get in my dairy in one shot. For lunch I had leftover falafel and salad, I ran out of regular pitas so I used the gyro kind (pocketless pitas) which was good and those will make great bases for pita pizzas. For dinner I made a Penne Primavera with zucchini, red peppers and asparagus, very tasty, with a small piece of garlic bread, Ben got a couple of big pieces.
