Long Weekend Food and Exercise Journal

It pissed rain MOST of the weekend, my garden is drowning, like seriously the soil is past saturation, some things are really not looking happy 🙁  The sun did come out around 4 PM on Monday, I guess it was nice that it showed up at all but we were already done for the day…

Saturday’s weigh in I gained 0.4 pounds, boo but I think it was the pho on Thursday.  Saturday afternoon I made rub and rubbed ribs which we are planning to have on Monday, Ben LOVES my ribs but it is a three day process.  Day one rub the ribs and chill at least overnight but up to 2 days.  Day 2 bake in the oven at 300 for 3 hours.  Day 3 put them on the grill for 10-15 minutes to heat them and give nice grill marks.  Totally worth the time and effort.  Saturday evening we went to Mexican for dinner and I had shrimp and veggie fajitas so good.

On Sunday I began the day with a run, running 4 miles in 48 minutes.  We met some of Ben’s co-workers at Lunchbox Laboratory for lunch.  Interesting hole in the wall, good burgers.  We were told they were huge so we shared one, big but not outrageous. so we also shared sweet potato fries and a couple of milk shakes 😛 The milk shakes were great we had a nutella one and an orange creamsicle one.  Our burger was the Dork 101.  The dork is mix of duck and pork and it was topped with onions and pesto mayo.  Then we headed to Cupcake Royale where we shared a carrot cupcake and a chocolate one with salted caramel icing.  For dinner we were still full so we had chips with some of Biz’s amazing Baja Fresh Salsa, although I used more jalapeños and I added back in the onions from the original recipe.  It was awesome and super hot!

Monday was a cross training day so I subjected myself to 40 minutes on the bike (I really hate the bike and I still can’t get my bodybugg to track it 🙁 ) Then did a full body workout on the bowflex, about time to up the weights for a bunch of exercises.  For brunch I made Portabello Benedicts,  a grilled portabello mushroom topped with a grilled proscuitto, scrambled eggs, a drizzle of pesto and a sprinkle of parmesan. We stayed in due to the crappy weather and watched Saving Private Ryan, a good choice for Memorial Day but damn depressing.  For dinner we had the ribs with a lowfat potato salad made with non fat greek yogurt and a touch of mayo and tabbouleh.  It was all awesome, the ribs were falling apart in their yummyness.  I love Monday holidays but they mess me up the rest of the week, I never seem to know what day it is.  Tomorrow is a running day and I hope the weather cooperates…

I am a huge fan of pho and hm, I’ll probably get some this weekend after my Half Marathon. Glad to see you’re getting some cross training in! It’s good to get a mixture so you can balance out your imbalances. 🙂 Keep it up!

I don’t know about the cold vs. warm water. Diving in Thailand was amazing. I saw a whale shark AND seven manta rays in ONE dive. Plus a bunch of other things. Coral reefs are interesting. I need to dive a proper kelp forest though. I’m going to see if I can get a dive in on Catalina. The cold is actually not too bad. I was expecting way worse.

That’s what Biz’s salsa was missing…onions!!! YUM! Now I have to make more! We just finished it up last night!

Weekend sounded like a blast, and you officially have me craving a milk shake! Ah, it’s been ages!!
