Baked Shrimp with a Garlicky Lemon Sauce

3 points per serving

  • 1 pound peeled and deveined shrimp
  • 1/4 cup lemon juice
  • 2 Tbsp light butter, melted
  • zest of 2 lemons (the ones you juice, just zest first!)
  • 1/2 tsp black pepper (You can use 1 tsp lemon pepper instead of the pepper and lemon zest if desired)
  • 4 garlic cloves, minced
  • 1/4 cup white wine
  • 1 tsp Worcestershire Sauce
  • 1/4 tsp cayenne pepper
  • Chili flakes to taste (I used about 1 tsp)
  • 2 Tbsp chopped parsley

Preheat oven to 425°F.
Arrange shrimp in a single layer in a 13 x 9-inch baking dish coated with cooking spray. Combine lemon juice, lemon zest, pepper, melted butter, garlic, Worcestershire sauce, wine, cayenne and chili flakes; pour over shrimp.  Toss shrimp in Sauce to coat
Bake at 425°F for 8 to 10 minutes or until shrimp are done. Sprinkle parsley over shrimp; serve immediately. Yield: 4 servings (serving size: 3 ounces shrimp and 2 tablespoons sauce).

I served this over whole wheat linguine
