Why do we have to have Mondays?

I know, I know, if there was no Mondays then Tuesdays would suck, but still… I used to not work Mondays when I was teaching and no one could sympathise on Tuesday (my Monday), everyone sympathises with the suck that is Monday mornings.  For me Mondays mean lots of household chores and the mess that is Ben the Tasmanian devil, being home for 3 days.

I began Monday with a nice 2 mile run and I was happy with it, knee a touch sore, then I realised my shoes should have been retired a while ago, time for new shoes! Hopefully this will help the knee pain some.  Late in the day I realised that Monday should have also been strength training <sigh> guess I will be doing it tomorrow which would normally be an off day but isn’t during this run a mile a day challenge so it will work out to do the bowflex too.

After the physical activity was finished and I enjoyed strawberries and cream (yogurt) steel cut oats, I began the dreaded chores.  I filled out the census form, name didn’t fit, they are biased against hyphenated names… I did a bunch of medical paperwork to start on the joys of fertility treatments (35 pages people, 35 pages).  I did laundry including sheets, I did dishes including all the dishes I had to hunt for around the house, I swear Ben must have used one an hour… This was all exacerbated by the fact that he was home sick so  was home for 4 days.  Socks stuffed behind sub woofers, glasses in every room in the house, he really needs to be housebroken a bit more (sorry Ben I love you, really 🙂 ).  For lunch I finished off the egg white quiche from Friday with a salad.  For dinner I made Cheesy Zucchini and Red Pepper Bake that I found over at Nicole’s Prevention RD This was a serious winner, good texture, flavour and meatless! (oh and huge serving)  With it we had Green Beans with lemon zest, parsley and toasted almonds totally yummy.

Ate 23.5 of 24 points. Earned 6 activity points.

Breakfast (4.5) – 1 cup strawberries (0.5), Steel cut oatmeal (2), non fat greek yogurt (1), maple syrup (the real thing) (1)

Lunch (6)–Quiche and salad

Dinner (12)–Cheesy Zucchini and Red Pepper Bake (5), Green Beans with almonds (2), Wine (2)

Snack (4)–Dark Chocolate with Chili (all this chocolate, guess what time of the month is coming up)

Running Weekly totals used 28.5 of 35 weekly points, earned 17 activity points.

I am running so late, but I had to stop by and say that I’m glad you enjoyed the zucchini bake!!! 🙂

LOVED it! so did the hubby and he’s a meat and potatoes kind of guy. I did turn up the heat a bit 😛 some cayenne, chili flakes mmmm.
