The Easter Bunny has left the building. April 4th Food and Exercise Journal

I RAN 4 miles non stop! Yes, you read that right 4 miles no walking not even when mile 3 was almost entirely uphill. (I have learned I should check my routes BEFORE I run them).  Easter is not a big deal around here so after my run I made brunch since Easter is an excuse for lamb and proscuitto wrapped asparagus we wanted to have a good size brunch to hold us over until dinner.  For Brunch I made chicken sausages, hashbrowns, eggs and a bagel thin with neufchâtel cheese.  The weather was not bad so we decided to take the dogs for a long walk before it decided to rain on us.  I had an afternoon snack of blueberries with Greek yogurt, then it was time for the main event.

For dinner we had Roast Leg of lamb that I did an herb crust and slid sliced garlic cloves in, I also roasted whole heads of garlic to go with it.  I also made a WeightWatchers potatoes au gratin that was surprisingly delicious, hooray for there being some really good reduced fat cheddars out there now.  Finally we had proscuitto wrapped asparagus which where roasted for 15 minutes, just enough time for the asparagus to get tender and the proscuitto to get crispy, YUM.  We enjoyed this with a 2001 Eberle Zinfandel that complimented the meal perfectly.  For dessert later that evening we had homemade lemon angel food cake (it looked awful since it stuck to the pan, but tasted great) with sliced strawberries and a small scoop of ice cream (mine was about 1/4 of a cup).  No candy, no chocolate, nothing around to tempt me.  I made the angel food cake with whole wheat pastry flour and I really liked the texture and moistness.

Ate 34 of 24 points. Earned 7 activity points.
