Taking it Easy

Yesterday was a crazy day with running a 10k race and eating out twice, but it was a good day and I was happy with my choices.  Today I was feeling great only a tiny bit of soreness in my knee.  I spent the morning in doctor’s appointments and then had to run into Seattle to grab the heartrate transmitter to my Garmin, that I somehow left in the restaurant at lunch.  Today was a rest day and I actually took it as a rest day only walking the dogs to get in my mile for the April Mile a Day Challenge.  Tomorrow is back to running and I’m looking forward to it.  And if you want to know a bit more about me check out this blog post at Slim Shoppin’ as well as the other success stories Jennifer has posted.

For breakfast I had a peanut butter and banana sandwich on a sandwich thin.  For lunch I had leftover Lazy Chili.  For dinner I made a Penne and Zucchini Carbonara.  Along the lines of the cauliflower mac and cheese, I added a veggie to a pasta dish.  I cut the zucchini into pieces about the size of the penne and lightened up the sauce by using egg whites.  Ben and I both thought this was excellent and will be having it again.

Ate 23 of 24 points. Earned 2 activity points.

  • Breakfast (4) –Peanut butter, 1/2 banana, sandwich thin
  • Lunch (7)–Lazy Chili (6.5), V8 small can (0.5)
  • Dinner (10.5)–Penne and Zucchini Carbonara 1.5 servings
  • Snack (1.5)–Chocolate pudding and V8

Okay, there is another dish that is going on my lunch menu next week! I left a comment on your success story – did you know that Jenn is my twin sister? Some people do, some don’t – wasn’t sure!

Anyway, I gave a serving of my (your!) chicken soba noodle salad and her husband loved it – and he’s a very picky eater and usually doesn’t like any veggies!

LOL I had absolutely no idea she was your sister.

Glad Tony liked the salad, it’s a good one, Ben likes it too, but prefers it as a lunch to a dinner since it is on the lighter side. The carbonara is awesome and pretty with the zucchini being roughly the size and shape of the penne, of course any pasta would work. I generally spice up the soba salad a bit more but that’s the base then I go by taste on an individual day, sometimes I like it hotter.

I am a sucker for carbonara! That looks wonderful! I love, love, love zucchini too! Forgot to plant it this year, though!
