Finally Friday

by Alison on April 23, 2010

It’s finally Friday!  I started the day with a 2 mile run, my slow time is getting a bit faster, woot.  It just feels natural to start my day with a run, who would have thought.  I came home and made huevos rancheros for breakfast then took Ben to get a new badge for work followed by taking the dogs out to the Soos Creek Trail, the same distance as my early morning run took twice as long with Ben and the dogs in tow.  For lunch I made paninis with chicken and provolone with a salad.  I did some more work in the garden, I think everything is looking pretty solid at this point, still some transplanting to do and I have to replant the green beans which never germinated 🙁

For dinner I threw together a quick chicken chili.  Into the pot went 4 cups of cooked beans, (I used a mix of kidney, black and white beans), 1 pound of cooked chicken breast, 2 cups of salsa (I used a super hot one), a jalapeño, 2 cups of chicken broth and a cup of low fat mozzarella cheese.  Super easy and very tasty, we topped it with a bit of sour cream.

Tomorrow is my weigh in and Sunday I am running my first 10k, so busy weekend!  Saving my splurge for Sunday so that I don’t load up on calories the night before the race.
