Doggie Day

by Alison on April 21, 2010

The dogs thought that today was a fantastic day.  I took the dogs to the Soos Creek Trail and we did 4 miles.  This time I went the other way on the trail (toward Renton) and it felt very different, much shadier and the trees much closer to the trail and having to cross a major road, but it was a nice walk, oh and much more hilly.  The dogs were wired for the whole four miles which meant I got quite the upper body workout every time we saw another dog, fortunately we didn’t see an squirrellers or I would have lost my arms, there is just something about a squirrel or cat that they cannot resist and rope burn from a  leash stinks.  And the lucky doggies got a second walk when we picked Ben up, he stubbed his toe and has been whining like a baby limping around for over a week so we still have to take it slow and he burns out even faster than usual.

After reading Biggest Diabetic Loser (Biz has the best food and likes spicy even more than me!) I had to have huevos rancheros for breakfast which was awesome because we were out of other bread products (or they were in the freezer).  It was tasty and sounds like a great Friday breakfast with Ben, but I’ll kick it up with some sliced jalapeños on top.  For lunch I had half portions of the leftover curries from the night before, the Chana Masala was definitely still the better of the two, I’ll get the recipe up soon.  Dinner was leftover Smokey (and super spicy) BBQ Pork Quesadillas.  WOW the spice went through the roof sitting melding together.  This recipe as written isn’t meant to be spicy, but the adaptations I made, make it spicy and when it sits it gets REALLY spicy, I had a small fire party in my mouth (in a good way) and the cheese helps to put it out a bit. Love the spicy!!! I’d love the recipe for the bbq pork – I grew up with my grandfather’s North Carolina bbq – there is no sauce, the pork is cooked down in vinegar, crushed red peppers and Tabasco! The first time I made it for my husband, he’s like “where is the barbecue sauce??!!”

Glad you liked the huevos!!
