Chicken Souvlaki Sandwiches

Adapted from a WeightWatchers recipe

Ingredients

  • 1/4 cup fresh lemon juic
  • 2 Tbsp low sodium soy sauce
  • 1 Tbsp honey
  • 3 garlic cloves, minced
  • 2 tsp olive oil
  • 2 tsp dried oregano
  • 1 pound uncooked boneless, skinless chicken breast either sliced or cubed
  • 1/2 cup non fat greek yogurt
  • 1/2 cup cucumber, shredded
  • 1/2 tsp garlic powder
  • 4 large whole wheat pitas, halved
For Greek Side Salad

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • salt and pepper to taste

Directions

  • Preheat oven to 400ºF.
  • In a shallow baking pan or pyrex dish, whisk together lemon juice, soy sauce, honey, minced garlic, oil and oregano; add chicken and turn to coat.
  • Bake until chicken is cooked through, about 20 to 25 minutes, spooning sauce over chicken once or twice during cooking.
  • In a small bowl, combine yogurt, cucumber, dill and garlic powder. (This can be done a day or 2 in advance and the flavours will meld more)
  • When chicken is cool enough to handle, place chicken inside pita pocket halves. Add 1/4 cup Greek Side Salad to each half.  Spoon 2 tablespoons of yogurt sauce into each pita half.

Yields 2 halves per serving.  Makes 4 servings
