My arthritis in my ankle was flaring yesterday and today I could tell I was favouring the ankle yesterday as just about every muscle in my other leg was sore… stupid arthritis, I’m too damn young! So today I just did my slow walking 5 minutes out of every hour, still got in 60 minutes of moderate activity in, not bad on a rest day. I ended up having a meatless day by accident, kind of nice when it just happens. I am loving the spinach salad I devised, lots of flavours and textures and very filling.
I hopped on the Kale Chip bandwagon. I have seen Kale chips on a million blogs lately so I decided to try them. They were GREAT, salty and crunchy perfect for a craving and healthy and easy. Basically wash and dry thoroughly a bunch of Kale, tear the leaves off leaving the stems behind and tear the leaves into chip size pieces. spray lightly with olive oil cooking spray, sprinkle with salt and bake at 350 for 10-15 minutes. You want them dry so they become crispy and don’t steam in the oven. Next time I will try them with garlic salt. Seriously try these they are very good and crunchy, did I mention salty and crunchy???? What’s not to love?
For dinner I took the leftover chili which got a TON spicier sitting for 2 days and served it over a half a baked potato, it was good. The portions for 5 points of chili are huge, 2 cups of hearty veggie and bean chili, very filling and loaded with lots of veggies from most of the colours of the rainbow.
Tomorrow I plan to do my couch to 5k run and I will stop if the ankle flares, well I’ll probably stop, if I’m near the end I’ll finish.
