Spinach Salad with Mandarin Oranges and Chicken

  • 3 cups baby spinach
  • 2 tsp balsamic vinegar
  • 2 tsp olive oil
  • 1 tsp dijon mustard
  • 1/2 tsp light soy sauce
  • 1/4 cup mandarin oranges in water
  • 2 oz chicken breast, sliced
  • 1 Tbsp sliced or slivered almonds
  • 1 Tbsp reduced fat feta

Instructions

Whisk together the oil, vinegar, soy sauce and dijon.  Add spinach to dressing and toss to coat, add in chicken, mandarin oranges, feta and almonds.
