Spinach Salad with Mandarin Oranges and Chicken

  • 3 cups baby spinach
  • 2 tsp balsamic vinegar
  • 2 tsp olive oil
  • 1 tsp dijon mustard
  • 1/2 tsp light soy sauce
  • 1/4 cup mandarin oranges in water
  • 2 oz chicken breast, sliced
  • 1 Tbsp sliced or slivered almonds
  • 1 Tbsp reduced fat feta


Whisk together the oil, vinegar, soy sauce and dijon.  Add spinach to dressing and toss to coat, add in chicken, mandarin oranges, feta and almonds.

Interestingly when I put all the ingredients in the WeightWatchers point tracker separately it comes out to 5.5 points.
