Ran 3 Miles! February 23rd Food and Exercise Journal

So today was Week 8 day 2 of Couch to 5k and I RAN ALL 3 MILES!  Today called for 28 minutes of running but I ran for 38:08 (I have been about 5 minutes above what it calls for for a couple weeks)  So I did 2.99 miles in the 38 minutes of couch to 5k and finished 3 miles in 38:08, if I had increased the speed for my last push just a bit earlier I could have finished in 38.  Next time…

For breakfast I had a quick peanut butter, banana toast so that I could work out.  Lunch was leftover chicken souvlaki sandwiches.  For dinner I made brown basmati rice with thai coconut shrimp.  It was good but needed to have more curry paste.  I used Thai Kitchen Red Curry Paste and although the flavour was good it wasn’t intense enough either in flavour profile or spice, so next time I’ll add more.  This would be so easy to make vegetarian by adding tofu or just more veggies.  The portion was huge and it could probably serve 6 as easily as it served 4.  For my snack I smeared peanut butter on a chocolate vitatop.

Ate 22.5 of 25 points. Earned 5 activity points.

Breakfast(4.5) –small banana (1.5),  peanut butter (2),  toast (1)

Lunch (7)–Chicken Souvlaki Sandwich (6), greek salad (1)

Dinner (8)–Brown Basmati Rice with Thai Coconut Shrimp

Snack (3) chocolate vitamuffin with peanut butter

Running Weekly totals used 22.5 of 35 weekly points, earned 17 activity points

Holy shit – that’s an AWESOME RUN!! You should be so proud of yourself!!

My daughter LOVES coconut shrimp – I never think to make it at home though!

I hope you try my pho soup – just enough spice! 😀
