Mondays stink! February 1st Food and Exercise Journal

Breakfast(5) –Cherry Vanilla Oatmeal

Lunch (6)–Amaranth, Quinoa and Corn Chowder (4), Aloo Gobi (2)

Snack (2)–Yogurt (2)

Dinner (8)–Spinach Alfredo over whole wheat linguine (7), Sautéed Zucchini with Oregano and Feta (1)

Snack (1)–Oatmeal Raisin Bite

Mondays are stinky!  I hate trying to wake up early, although trying to get to bed earlier last night helped some.  Today was a day of tedious home chores.  I did 2 loads of laundry, did dishes and then cleaned a bunch of new tupperware, cleaned the yard, brushed the dog etc…  I also got in 2 miles on the treadmill and The Firm Body Sculpt.  I also did 10 minutes of walking every 2 hours.

Today was Meatless Monday.  For Breakfast I made Cherry Vanilla Oatmeal, so yummy, dried cherries, vanilla, and cherry all fruit.  For lunch I had leftover amaranth, quinoa and corn chowder and aloo gobi.  I had yogurt for a snack and for dinner I made Spinach Alfredo modified from a recipe from PreventionRD.  It was good and creamy, I forgot the garlic so I will have to try it again because it could definitely use the garlic!  I also made sautéed zucchini with oregano and feta which went with it very well.

I’m so glad you liked it! The Laughing Cow is so versatile, I love finding fun new ways to enjoy it and cook with it! Gotta try it again with garlic for sure!! 🙂
