Monday, Monday, Monday February 8th Food and Exercise Journal

Mondays are always such a struggle to get out of bed.  The 3 day weekend, Ben works 4 10 hour days so we have Friday, Saturday and Sunday off, makes Mondays especially brutal.  When that alarm goes off at 6:20 I’m knackered! Especially since try as I might I can’t convince Ben that going to bed earlier is a good idea.  So I forgot it was meatless monday and had meat with lunch but I’ll skip meat for lunch tomorrow and still have a meatless 24 hours :p  For Breakfast I had steel cut oats with greek yogurt, chia seeds and blueberries, sweetened with maple syrup.  Then I did 2 miles of hills and intervals on the treadmill, followed by 30 day shred level 1, I can really feel those push ups.  For lunch I had leftovers from our steak dinner the other night.  I had the steak cold it was so tasty as is it didn’t need to be warmed up or sauced or anything.  I did a bit of shopping replacing undergarments that no longer fit for ones that do and when I went to try on PJ bottoms I grabbed an XXL duh I know I don’t wear that size even in a “normal”clothes store but I grabbed it, tried it on and laughed almost 2 of me could have fit :p  So I grabbed a large, snug but they did fit! Woot wearing a large in a normal clothes store. <does the happy dance>

For dinner I made a great recipe from Roni at Green Lite Bites Her Curried Quinoa Stuffed Peppers were excellent, I adapted the curry powder a bit to my own blend but all in all a hit in my book.  Ben found them a bit on the dry side so I told him next time I’d make him a mango chutney yogurt sauce.  I also used a mix of red and ivory quinoa for the colour that it gives, YUMMY! Totally filling for very few points and great for Meatless Mondays.

Curried Quinoa Stuffed Peppers and Green Beans

Ate 22.5 of 25 points. Earned 5 activity points.

Breakfast(6) – yogurt(1), maple syurp (1), steel cut oatmeal (2), chia seeds (1), blueberries (1)

Lunch (9.5)–steak (5), potato (1.5), light sour cream (1), sesame broccoli (2)

Dinner (5)–Curried Quinoa Stuffed Peppers (4), green beans with butter (1)

Snack (2)–Flan

Running Weekly totals used 29.5 of 35 weekly points, earned 12 activity points

So now I’m on a little quinoa kick…where do you buy it? I got some from Trader Joes, but I’d like other options…

Also, how exciting about your clothes shopping trip! It’s so fun when those little things happen. 🙂

I buy it at the bulk bins at whole foods, they have the ivory and the red and its cheap from the bins.

Yay for shopping at a regular store, and not needing the largest size!
I read back a few of your posts today, and somehow never realized that in all your hard fitness work over the past year, you hadn’t been doing actual running until January. Makes your accomplishment in that race, and in general, even more impressive. I’ve been eating like cr*p and been inconsistent in my exercise all year. I feel challenged to pick it up and put myself back together. I know how much happier I am when I’m in a healthy routine…
