January 21st Food and Exercise Journal

Breakfast(5) –cherry Vanilla Oatmeal (5)

Lunch (8)–Sausage, Barley and Kale (6), cashews (2)

Dinner (9.5)–Chicken Biryani (7), green beans with butter (1), 1/2 beer (1.5)

Snack (3)–chocolate pudding (1)cashew clusters (2)

Week 3 day 3 of couch to 5k  done, got my best time ever for 3 miles 42 minutes, yes slow (I know) but its improving and that’s what counts.  I am dreading next week jumping up to 5 minutes of jogging, I might need to slow the speed since right now I still struggle to get to 3, but who knows 2 days off might be all I need to get my body recharged.

I made my sausage, bulgur and kale recipe with barley when I realised at the add stage that I was out of bulgur, DOH! But it actually turned out really good, a bit more texture and sense of substantialness (is that a word???) from the barley, not that I don’t like bulgur but it’s sort of barely there sometimes.

For dinner I made Chicken Biryani in my new pressure cooker.  I have a new friend in the kitchen, I LOVE this appliance.  I got an electric one that has a rice cooker function, brown rice, real brown rice not instant in 15 minutes!!!!! It also has a browning feature that I used to cook the onions and spices before I put in the rest of the ingredients for the biryani.  It cooked at high pressure for 3 minutes! Then did a natural release for 7 before I forced the release of the rest of the pressure to add the frozen peas and let them cook in the residual steam.  It took about 5 minutes to get up to pressure so 15 minutes total for a dish that had super tender chicken, rice fully cooked, WOW!  I can’t wait to try more recipes I think I might like this better than my slow cooker and supposedly you hold onto more nutrients due to the short cooking times, bonus!  Did I mention 1 Tbsp of butter for 8 servings was the only added fat?

Finally last night I went to an SCA social (the SCA is the Society for Creative Anachronism a medieval recreation group)  I liked the group and think I will become more involved again.  It’s fun for a history buff like myself and when I played before I did alot of brewing and some medieval cooking so I am looking forward to getting into that again.  Medieval cookery is actually quite interesting and gives me ideas for more mundane recipes sometimes.  Brewing is just fun.  Ben is still uncertain what he thinks of all of this, but is willing to try it and brewing and archery two of my favourite SCA pass times appeal to him as well.  We are going to another social tonight where I hope to get some feedback on my mead before I brew my latest batch.

Thanks Nicole, it feels great especially as I did have to push myself out of my comfort zone.
