January 17th Food and Exercise Journal

Breakfast(5) –cereal, 1/2 cup milk, 2 oz reduced fat cheddar
Lunch (8)–Roast Beef and Watercress Sandwich with Horseradish Sauce (7), mandarin oranges
Dinner (12)–Pork Picatta with Spinach and Garlic Mashed Potatoes (10), wine (2)

Week 3 day 1 of couch to 5k in the books.  I thought going from 90 seconds of running with 2 minute of walking to 3 minutes of running with 3 of walking would be alot harder than it was (I was dreading it to be honest) but I did it, I managed it, I finished!  Then I rounded out my mileage and calories burned at a 4 mph walk.

I made Roast Beef and Watercress Sandwiches with Horseradish Sauce and they were really good.  I’m not usually a sandwich person, I generally prefer soups or salads, but this really tasted nice.  So many strong flavours  and the tomatoes were actually not bad which I find shocking at this time of year.  I’m such a tomato snob that I usually just skip full size tomatoes in winter and opt for cherry tomatoes which seem to have at least some flavour left.

Pork Picatta was very good again but I stressed myself in the kitchen by trying to cook dinner, the pork, the spinach the mashed potatoes, all timed to come out together, as well as Monday’s lunch, Farro soup with Kale and Canellini.  Too much going on, not a big enough stove.  Have I mentioned recently how much I HATE electric stoves???? They are the bane of my existence if I want to cook with electricity I will use a toaster or a microwave but get it off my stove! When looking for places to rent back in the day I cringed at the ads AEK!!!! All electric kitchen, GROSS!  Mind you I like an electric oven, seems to be more reliable on temperature but I want a gas stove again 🙁
