Feeling Under the Weather, Food and Exercise Journal 1/24

Breakfast(6) –Yogurt(1), maple syrup(1), mix my granola(2) and blueberries(1), cranbran vitamuffin(1) (before my run)

Lunch (8.5)–Ham and Cheese Panini(6), 2 Mrs Fields nibbler cookies (2.5)

Dinner (9)–Chicken Enchiladas, salad with homemade vinagrette

My sore throat was more sore as well as a runny nose and head congestion this morning and just a generally feeling run down, but I have read that if your symptoms are above the neck its fine to exercise, so I did.  I completed week 4 day 1 of couch to 5k.  In the 31.5 minutes of the program I walk/jogged 2.2 miles and then rounded it out finishing 3 miles in 43:30 minutes.  Not my fastest time but I was not feeling great so I dialed back the speed on the running portions but I still did 5 minutes of running twice!  I went from 3 minutes to 5 minutes, GO ME!

For Breakfast I did a half cup of plain nonfat yogurt with maple syrup, my mix your granola blend, and blueberries, turned out pretty good, I could probably skip sweetening it but I love the maple flavour.  For lunch we made Paninis from the new Ellie Krieger cookbook, prosciutto, provolone, radicchio, basil and balsamic vinegar, YUM.  I went out to try to find the Sketchers Shape ups for every day shoes but no one had them in an 8.5 in a style I liked, but the 8.5 fit so I ordered them from amazon for less than the stores had them for 🙂

For dinner I tried a Chicken Enchilada recipe from WeightWatchers.  It was good but didn’t feel very enchilada like.  I think of enchiladas as more saucy and next time I might add some sauce.  That said they still tasted good.  I made them in the convection toaster oven that we got for ourselves for christmas (I LOVE this machine, it cooks a 13 inch pizza!)  Should have remembered it cooks faster on convection, made the tortillas extra crispy but I think I actually liked that.  It might even be possible to make hard tortilla shells with no added fat this way…. Things to try in the future.  With the Enchiladas we had a simple salad with a homemade vinagrette of rice wine vinegar, dijon and olive oil, simple and delicious.

I’m headed to bed early again tonight, going to try to knock this thing out as quickly as possible!
